Rivendel - Verdejo
White wine, aged.
Grapes variety: Verdejo 86%, Viognier 14%.
Certificate of Origin: D.O. Rueda.
Place of production: Castilla y León, Valladolid, Spain.
This wine has a new elaboration style, appreciated in its tasting: 40% of Verdejo grapes and 100% Viognier ferment spontaneously in 500-liter French oak barrels for 6 months, while the remaining 60% ferments in stainless-steel tanks with lees for 6 months. The result is a fresh, elegant wine with floral notes and a hint of wood, setting it apart from traditional wines.
Limited production: 7152 numbered bottles.
Alcohol: 13,4 %
Optimal serving temperature: 7 - 9 ºC.
Tasting note synopsis: bright straw yellow color with green glints. Intense nose with lots of aromas perfectly integrated: stone fruit, white blossom (chamomile, daisy), and aromatic herbs (lavender) together with a noticeable minerality. Fresh and full of sensations palate, with a pleasant acidity. All the nose touches are present in the mouth, together with a creamy sensation and long aftertaste.
Pairing: rice, seafood, fatty fish, sushi and sashimi, legume stews with fish, grilled vegetables, and Spanish paella.
